However...
DOwnloading the new game LAUNCHER (LAUNCHER ONLY) does not effect the gameplay and getting on (i tried it, i can still get on) the new launcher will also ask you if you would like to update, so obviously tell it "NO"

Not necessarily. After some research (Because I had the older client and updated before reading this post) you CAN go back to an older version.
First, credit goes to this guy here: Deakn
First, you want to go to his website and download "minecraft downgrade.txt". This contains the instructions on how to perform the downgrade.
For the actual bin files you need, I used his "minecraft 12 02.zip" and things turned out fine.
Please note, while it wasn't mentioned in his instructions do NOT replace your version file with the one in the zip. It causes minecraft to update again when using the older launcher. Also note that I have not been able to get it to work with the new launcher. I just happened to have the old one still sitting on my desktop so I used that.
Another benefit of doing this is that if you want to switch between the new update and playing on this server you can save your old bin files instead of deleting them. Then just switch them back and forth depending on what version you want to play while keeping your version file the same to stop it from updating.
Hope this helps.

Re: Do NOT Update Minecraft!
Did you run it with the new launcher or the old one? As I said before, I had issues with the new one. Particularly with crashes when loading a world.
Also, just noticed that you're using a mac. That could be causing unforeseen issues as well and I can't really help you if that's what the problem is. I did notice however that in the tutorial I followed you have to leave the "natives" folder untouched from the update as well for mac's. If you deleted that, I'd say try deleting the whole contents of the bin folder, updating minecraft again and starting over but leaving both the natives folder and the version file unchanged.
